    MANGO PORK BELLY TACOS

    We cooked up this dead easy recipe for friends this summer. Fresh mango, zesty lime and crispy pork belly made the most delicious fillings for this super duper easy taco recipe. Shared by the river for lunch on a warm summer's day, life doesn't get much better than this!


    Ingredients

    Small tortillas  

    Pork belly (roughly 1.2kg piece)

    2 Mangoes

    2 Tomatoes

    1/2 Red onion

    2 Limes 

    Handful of Coriander 

    Spring onion

    Salt 

    Olive oil 

    Method

    1. Start off with cooking the pork belly. Pat it dry with some paper towel and give it a coat in olive oil and a generous amount of salt. 
    2. We placed the pork belly in the OzBraai, upright in front of the fire and cooked for 1.5 hours, and rotating 4 times to get an even cook. Cooking time will vary depending on the thickness of your piece and how hot your fire is. Alternatively you can cook this in a camp oven or on a BBQ. 
    3. While the pork is cooking make the mango salsa, dice mangoes, tomatoes and red onion then finely slice coriander and spring onion. Add a pinch of salt and the juice of 1.5-2 limes depending on how juicy they are, then mix the lot together. 
    4. Once the pork belly is cooked through and the juices run clear, let it rest before cutting into slices, keeping the crackling on. 
    5. give the tortillas a quick toast on the fire to warm them up and then fill with a slice or two of pork and a scoop of salsa. 


    This recipe is dead easy and sure to impress your mates this summer round the campfire (or BBQ if you live somewhere fires are banned in summer!) The sweet and zesty mango salsa balances the rich and salty pork belly so well and tastes like summer wrapped in a soft taco!
